The normal Ladakh homes are made from sun-dried bricks throughout. They are normally cavity walls, where the internal wall has a normal brick formation and the external wall has bricks stacked end ways. As you mentioned some are clad with more mud for extra insulation. They pack the cavities with hay and rubble, whatever is available. I mentioned trombe walls being used at the school. Although this technique is being applied in new builds, the older buildings use polythene sheets and straw covered roofs. Only a limited number of rooms are used throughout the winter months due to the cold temperatures.
