The kind of stone-wall you refer to is called in spanish "mampuesto" or "mampostería". The m before the p comes form a gramatical rule I bet, so it would be in reality "put by hand".

Other than that is using the methods of modern wall prefabrication, and most surely only when the recommendations in such practice are followed you are going to get the neat appearance yoou seem to seek after washing of finishing. In this case I would look for
architectural precast concrete
(precast-prestressed concrete institute)
Maybe a third and practical approach would be enlist the help of a stone masonry specialist in the zone you live in ... this is however less likely to be forthcoming, you planning do it yourself, but the stone seller himself may be willing to help with advice.
