I recently graduated with my BFA in Interior Design, and designed a funeral home for my Senior Thesis Project. I found that very little printed information exists about the design of funeral homes. There is a small section in "Time Saver Standards for Building Types" for the programming phase of designing a funeral home. It gives information about spaces required in the building, traffic flow through the space, measurements for door openings and turn around radius for caskets, etc. Let me know if you have specific questions, and I can look though the information I collected while working on my project to see if I can find an answer for you.
