I did a hospital for my thesis, and found the U.S. Public Health service very helpful-- they had a division on design, construction, etc.. They have a good many guide lines and standards for hospitals and I am sure they could have information about colors, finishes, etc. Also, you might reserach books or papers on the psychology of color-- there are distinct impacts from different colors in different locations, that effect things from healing, to anger, to attractiveness of food, etc.
