I am not sure if your idea of "touristic resort" includes the notion of a skiing type resort as part of the program, but if it does,try this web site for a view of a number of mountain resort type projects here in the US, including descriptions of some of their "Green" design aspects which hits on your environmental impact issues:

Egosign is another "world famous" mountain resort design firm with designs of over 100 mountain resorts worldwide. Go see some of their ideas on their web site too.
