I believe you have to construct the open web joists piece by piece for the best effect. However if you are not looking for absolute realism you could cut holes in the extruded shape and make it realistic using the opening tool.

additionally, check out Artifices "machines" for creating very complex shapes. structural elements could be created with these machines. Alternatively steel colums could simply be drawn in plan using the polygon tool then extruded OR as a 3d block and cut with the knife tool in the desired shape!

Hope this help although it certainly isn't a step by step!!
