This will be a short answer to a question that could potentially require a long answer.
The process I use is to begin by creating a slab that has the overall outline of the roof you are going to make. You can use the polyline tool to create one slab, or the block tool to create a series of rectangles that form the final outline. I like the later method. Make this slab roughly the thickness of your final roof depth (12 to 18 inches).
In plan mode use the trim tool to trim the lines where the peaks, valleys, and ridges on the roof are located. Move to perspective mode and use the face tool to select a vertical, inside surface of your roof. Raise that surface the height of your roof. Say 8 feet or so.
Do the same with the remaining polygons and rectangles. until they are raised to the same height. You will now have a roof that you can install your walls and spaces into. Once you translate my words to your pictures with some simple blocks, you will find that the process really goes quite quickly.
One last note, if you have a triangular roof element (in plan), you will need to use the command modification key (on a Mac)to raise the point that needs to be raised. Remember to raise both the top and bottom points to keep the underside hollow.
