The method yoou describe seems to be very workable although I cannot speak with experience about sketchup. I think it might be possible to test this (stacking with offsets in an isometric format for plans as polygons. things like walls, doors, windows etc.. would need to be projected also for the wireframe to be complete. vectorworks uses a layer-linking scheme to create the model although a full building model can be generated from one floor with the full height the "z" distance.
