In the older powercadd versions, I would set up several sets of horizontal and vertical lines with various line spacings - also set up a few sets at a specificied angle - then when needed, I would define a shape with the polygon tool, hatch with one of the predefined hatches, ungroup so I could throw away the shape and, voila ! - a nice group of fine lines to give the surface some definition. With the angled sets of hatch lines, I could change the angle at the last minute to match the angle of the object.

While I lament with you the ability to set hatches with spaced, angled lines in the old PowerCADD, a lot of what you describe is available in the WildTools Grid tool.
