Look up the works of Juhani Pallasmaa. A professor of mine and a great believer in architecture of the entire range of senses, he has many wonderful books and articles.
I am currently in a class that deals with just these issues, understanding smell, touch, hearing and the overemphasis of vision.
James Turrell is a fantastic "light" artist, who started his art from a 9 month long prison sentence of solitary confinement in a darkened cell with one window from above. His writings and works might be useful to you. Also, Louis Borges, and Argentinian bibliophile who became blind writes eloquently about his blindness being a gift.
Another architect who is concerned with allowing people a full range of senory experience in his work is Rick Joy, who practices in Arizona in the United States.
