Do sketches as you travel of local scenes (not necessarily buildings). Keep a graphic journal. In the portfolio of another prospective student in the Midlands, as I recall, the landscape sketches were the most persuasive. (She probably is reading this, as a regular visitor to this forum).
Trying to design buildings may be counterproductive, since the designs may seem banal to architectural faculty. There is less hazard in sketching existing buildings or other subjects.
Often courses given at local art museums or elsewhere help prospective students complile a portfolion. It may not be so much the instruction provided as merely the structured program of practice that is useful.
